Loved it!!!! Will definitely increase the cumin, cinnamon and coriander next go around. Let's see what happens when I do that.
Very nice! I've made several other recipes with these kind of spices and we always enjoy them. Would be very pretty with multi colored carrots, but only had the regular, but fresh from Farmer's Market, so very flavorful. Used more of each spice and added a little smoked paprika as we like robust flavors. Served with whole wheat cous cous . Would make a nice presentation for a dinner party if served with something green, like asparagus or green beans, esp with the various colored carrots is you can find them!
Saw this in Sunset and had to give it a try. It turned out delicious. Think next time I will up the seasoning amounts on the coriander and cumin.
Yum and so easy! The Marcona almonds were tough to find. After 2 other stores, I found some at Trader Joe's s seasoned with rosemary. Thought it couldn't be too bad with chicken and it was delicious. I just omitted the 1/2 t of salt at the end since the almonds were so salty...perfection!
Made this tonight and it was a huge hit. The flavors were wonderful. Loved the Marcona almonds for texture and the raisins for a slight sweetness. Will definitely make again but will cut the olive oil in half and increase the spices to heaping 1/2 teaspoons.
