Breakfast and lunch are hard. Let’s just all admit that it’s difficult to keep ourselves fed when we’re trying to wake up, get motivated, and get going. I find these meals to be incredibly difficult, and I don’t even have children, so I can only imagine how hard they must be for parents.

That’s why my life was changed when I discovered you can freeze scrambled eggs. Let me explain. I usually eat a meal around 10:30, after working for a couple of hours. At that point, I’m pretty hungry and I want to eat something that 1) is hot, 2) has protein, and 3) is not sweet. That almost always adds up to eggs, which means I’m actually cooking something, getting a pan dirty and taking at least 10 minutes to make some toast and scramble a couple of eggs. It doesn’t seem like much, but it has the potential to really derail my day.

That’s why I make these freezer stash breakfast burritos for myself. They give me the feeling of eating a real meal, which satisfies me, but they require nothing more than a couple minutes in the microwave. I can also pack them with vegetables, which makes me feel like I’m starting my day off on the right foot. When made with all the mix-ins, I find they’re very filling for lunch, if you’re more of a cereal-for-breakfast person. They’re also incredibly adaptable—the recipe is just a jumping off point. Want to add sausage or bacon? Go for it. Love a hash brown in your breakfast burrito? No one is going to be mad about that

They take a little preparation to make, but the initial time investment will pay back in dividends when you’re running out of time, groceries, or both. Plus, they’re incredibly scaleable. Make as many or as few as you want, and then store them, tightly wrapped, in your freezer for up to 3 months. I won’t tell anyone if you serve them to your children (or yourself) for dinner. Vegetables, remember?

They’re also excellent to bring to someone who might also need help getting a meal on the table: a new parent, someone recovering from surgery or another health issue, or someone in your life who needs a little tender love and care. Simply package them in a sealed bag with reheating instructions, and tuck them in your friend’s freezer. It’s like an emergency hug they can call on when they need a little help. Who doesn’t love a burrito?
