Grilled Strawberry Shortcake

We took a summertime favorite and made it even more… summery. This sweet and simple take on strawberry shortcake is accomplished on the grill, which means you can keep your oven turned off (as it should be during the toastiest months of the year). It’s a seasonal, fuss-free dessert that’s perfect for your next casual cookout.

  • Preheat grill to high (450°F to 500°F). Toss together strawberries and oil in a bowl.

  • Skewer strawberries, and place on grates; grill until slightly charred, about 1 minute. Flip skewers, and grill other side until just beginning to soften, about 1 minute more.

  • When cool enough to handle, remove from skewers. Slice strawberries; discard stems. Toss together sliced berries and sugar in a medium bowl; let stand 10 minutes, stirring occasionally.

  • Brush tops of cake cups with melted butter. Grill until lightly toasted, about 1 minute per side. Fill cake cups evenly with sweetened grilled berries; top with a dollop of whipped cream.
