I am sigle minded since I found out that I have Meniere's disease about lowering the salt in various recipes. This turned out to be very easy to accomplish with a couple of changes. I used garlic powder instead of garlic salt. I left out the plain salt altogether. And, most notable, I used shredded swiss cheese instead of the other cheeses. I did use a bit or parmesan, but not very much.Swiss cheese has been my savior since discovering that i had this disease, as it has literally got a quarter of the sodium of most other cheeses. I recommend it if you are on a low salt diet. My husband loved it, requested it again, and didn't say a word about the lack of salt. It was delicious! Making it again on Christmas eve.

This was delicious!!!!!!! I had it for Easter dinner. It was quite good. I would definitely make this again! I used frozen yellow squash and it was still good! YUMMO!
Fabulous recipe. I used whole wheat bread crumbs, low fat sour cream and only one egg. Also cut the amount of butter in half, but it was delicious. I did sprinkle an extra handfull of parmesan over the top before baking. Definitely a keeper.
This is a tried and true recipe that even my children, (12 & 16), REQUEST! Like other reviewers, I have changed things on occasion, depending on ingredients I have on hand. I always use a mixture of zucchini and yellow squash, it makes for a prettier presentation.
I've been looking for a good squash casserole and I've found it. This was delish! I tried to shave off some of the fat and calories by using only 1 egg, less parm. cheese and about a 1 tblsp. less of the butter and I used whole wheat bread to make my bread crumbs. Whole family enjoyed and went back for seconds.
Great squash casserole receipe. It was a big hit at a dinner party with friends. I will definately make this again. This is a great side for any dinner.
This was very good and easy to make. I have found that you can use reduced fat ingredients to make it healthier and it still tastes very good. You can easily substitute different cheeses based on what you have on hand. I would make this again and again and would have no problem serving it to guests.
Every year I make my own throw it together squash casserole. This year I wanted to try something new. My family loved this dish. It was one of the first things gone. Easy to make too!!
wow, delicious and easy. a definite addition to our thanksgiving menu. i followed the recipe exactly as outlined using zucchini & tatuma squash (mexican squash), and sourdough bread for the crumbs. the end result was positively delicious. my family loved it. i steamed the squash in the microwave and then added it right into pan of onion mixture. cut down on at least two things to clean (steam pan & mix bowl). so, so good, especially with a kick of red rooster hot sauce!
this was very tasty,made this for thanksgiving and made a smaller casserole of it and added a few rotini noodles not to many to over bear the dish and crumbled up bacon slices threw out just to try it out as family members was suggesting what else might taste good in it as we was planning our dinner menu and it was awesome..perhaps bacon bits could be used also..plan to keep this one handy and make every so often..
Excellent dish. For those posters concerned about it contributing to America's obesity problem and poor cardiovascular health, I suggest: don't eat the whole casserole by yourself, and don't eat it at every meal. This is clearly intended to be a special occasion dish, and for those of us more reasonable, it a tasty one. I am from the South, and like many others here who eat these sort of dishes occasionally, am neither obese nor have poor cardiovascular health. All things in moderation - even steamed veggies!
This was delicious. We added a little extra cheddar cheese to the top. I will be making this for Thanksgiving, I try to make a new dish every year. This year we will be having 22 guests. I hope they all like it as much as I did.

I really enjoyed this recipe and will make it again. Yes, it has a a jillion calories, but I found I was able to cut some calories out and maintain taste by using low-fat sour cream & chedder and by reducing the amount of butter. This a great dish to bring to a party or to impress your southern relatives during the holidays.
