This was outstanding! It came together quickly and is a good use for your over abundance of zucchini. The zucchini noodles were almost buttery and the lemony dressing perfectly balanced the rich tortellini and silky zucchini. I used sun dried tomato olive oil in the dressing.
When I first saw this recipe, it really appealed to me as I like ALL the ingredients and it seemed like every element would harmoniously blend with the others. I scrupulously followed each step in the recipe as I'm a HUGE fan of ALLRECIPES website and am even a subscriber to the magazine. I have unfailingly executed countless recipes from both sources with great success. Unfortunately while this recipe is very easy to complete, neither my husband nor yours truly thought it had much flavor. I even added extra basil/parsley from our garden but when tasting it, wondered if I should've added some feta cheese or oregano to the oil/lemon dressing to "pump up" the flavors. In addition, I found using a vegetable peeler to "prepare" the zucchini was tiresome and wonder if using a spiralizer would have been less painful. I really wanted to like this dish but can NOT recommend it as I don't want to make it again.
