The Easiest Appetizer Ever
When I realize I have friends on the way, I generally panic. I don't worry about the toys strewn about or that my counters aren't spotless. I start to mentally scroll my pantry, wondering what on earth I can serve them.
Enter: Potachos.
I love any recipe that I can pull together in no time.
To make Potachos (party nachos, or potato nachos, your choice!), you need some staples in your freezer. I always have frozen potato wedges, because they're an easy side, and when I make taco meet, I always freeze a few small baggies for just this reason. Our Potachos call for Carne Asada, but any cooked barbecue or Mexican meat will do just fine.
Besides meat and potatoes, your ingredient list includes cheese, black beans, guac (store-bought or homemade!), and your choice of toppings. I like banana peppers, olives, jalapenos, and salsa, all of which hang out in my pantry on a regular basis.
Potachos are a great twist on the regular nachos, because they're like cheese fries, but much sturdier, making them feel less like a side and more like a meal.
One user suggestion I'm excited to try? Sweet potato nachos. I might even call those dessert...
