made this for book club with the fresh raspberries and fresh mint...excellent flavor combination...everyone raved!
Excellent flavors of cheese, honey and salt â I rolled the goat cheese log (Choose a mild goat cheese as some can be a bit piquant) in the sunflower kernels, and served it with assorted crackers, sliced sweet-tart apples, blackberries, and clusters of red grapes which displayed a beautiful presentation and looked as though I spent some time on it. However, no one would guess how extremely easy this was to put together!
The second time I made this, I softened the cheese w/a little milk, put it in a small square server with sides, then sprinkled it with the sunflower seeds, drizzled the honey over and topped with the raspberries. Easier to eat. Next time I am going to melt a little raspberry preserves into the honey and see how that goes. Or maybe a little berry liqueur into the honey? oooooooh!
I put it together two minutes before company arrived using blackberries. Everyone loved it. I added the goat cheese and blackberries to an arugula salad the next day. Delicious!!
Great! Super easy, I used pumpkin seeds instead of sunflower seeds
I threw this together five minutes before company arrived. The berry garnish makes it look beautiful and I loved the sweet-salty combo. I will make this many more times for dinner parties.
