I couldn't figure out how to slice the squash as shown in the photo. Mine looked blah in comparison. Any comments? Other than that, those who tasted it at the get-together I brought it to, liked it very much. I'm not a big fan of feta really so I'm not sure. One friend said it was an explosion of flavors.

I actually made this without the mint and tossed it together with some pasta. It was very, very good. With the squash and lemon - a great summer dish. Will definitely make again.
Loved this salad! I couldn't get enough of it. I substituted goat cheese for the feta. I think the prosciutto is good but not a requirement to make this salad taste great. Enjoy!

I was really looking forward to this salad but both my husband and I thought it was just awful. Weird tasting, too minty, started off fresh but quickly turned to a very bitter, bad taste in the mouth. We tried to correct it to no avail. Would not make this again. Very disappointed.
Fabulous salad. The combination of savory, salty elements with the bright lemon and mint are perfectly proportioned. Great summer side or salad course. At 70 calories a serving you can't go wrong. Served with almond-crusted tilapia and polenta. I look forward to making this salad for friends.
I have made this at least twice a week since I first tried it. I can't get enough. It is absolutely delicious. I am not sure why some people haven't liked it. I don't put quite as much mint as is called for, and I usually just leave out the prosciutto all together and it is amazing! Definitely use feta cheese, not ricotta. One tip: make sure to shave the squash as the recipe says. I had a friend make it and she just cut the squash into chunks and it was nowhere near as impressive or as delicate and fresh tasting.
This is delicious and perfect for summer. I had tried something similar recently at a restaurant, so when I saw this recipe I had to try it. It has great flavor. I only used 1 tablespoon of mint because I was afraid 2 tablespoons might be too much. It turned out delicious. The crispy prosciutto and the feta cheese really add something special - very flavorful. Quick and easy to prepare.
The mint was a bit overwhelming, but overall it was refreshing and tasty. My 5 and 7 year olds ate it!

Really excellent. Lemon cuts any bitterness to the squash, texture lovely, the mint a treat.
This was delicious. I enjoyed the fresh flavors of the mint and lemon in the sauce, combined with the more robust flavors of the feta. I omitted the prosciutto on mine. A great use for all those zucchini and squash starting to come up in the garden.
