  • Preheat oven to 350°F. Stir together milk, quinoa, raisins, eggs, 1/4 cup of the maple syrup, 2 tablespoons of butter, and 1 1/2 teaspoons of the apple pie spice in a medium bowl until blended. Lightly spray an 11- x 7-inch baking dish with cooking spray, and pour quinoa mixture into prepared baking dish. Bake in preheated oven until set, 35 to 40 minutes.

  • Meanwhile, heat remaining 2 tablespoons butter in a large skillet over medium-high. Add apples, and cook, stirring often to coat, 1 to 2 minutes. Stir in lemon juice, and remaining 1/4 cup maple syrup and 1/2 teaspoon apple pie spice. Cook, stirring often, until apples are tender-crisp, 5 to 6 minutes.

  • Divide quinoa bake among 6 bowls. Top each evenly with apples and chopped walnuts. Drizzle with maple syrup if desired.
