We altered this traditional casserole to balance out the sweetness, allowing the pineapple and cheese to really shine. The intense flavor makes it an ideal side dish for baked ham.

  • Preheat oven to 350°F. Lightly coat an 8-inch square baking dish with cooking spray. Stir together pineapple chunks, pineapple tidbits, granulated sugar, brown sugar, flour, and lime juice in a large bowl; fold in cheese. Spoon mixture into prepared baking dish.

  • Stir together crushed crackers and melted butter in a medium bowl; sprinkle over pineapple mixture in baking dish. Bake in preheated oven until top is golden brown and mixture is bubbling, 30 to 35 minutes, covering with aluminum foil after 25 minutes to prevent overbrowning. Let stand 10 minutes; serve.
