One Star Because I Thing It's A Misprint.
I've made my share of pie crusts and almost all of them use 2-1/2 cups of flour for a 2 crust pie. I roll mine to two 13" disks, 1/8" thick. This recipe calls for 6 cups flour (almost 2.5 times as much flour) and yields two 11" disks, 1/8" thick?? Further down the recipe it say to place the 11" disk in a 10" cast iron pan and let the extra dough hang over the edge. A 10" cast iron pan is 2" deep (at least mine is) so there would be no "hang-over". In fact the dough would be 1" short of the edge!? My best guess is this recipe will yield two 11" disks 1/2" thick or two 26" disks 1/8" thick. Was this a misprint?
