Unlike the first reviewer, I followed the recipe and let it sit in the fridge. I made it the morning of the BBQ. It was delicious! I used Savoy Cabbage, since that is my favorite. If you've ever pickled peppers, you know it has to marinate. This has the deliciousness of the pickling, and the freshness of the mint and parsley. Honestly my new favorite non-traditional coleslaw. You could easily make this the day before you need it and it will taste just fine.
To be fair, I didn't refrigerate this 8 hours before serving. We didn't love the napa cabbage and prefer a more traditional green cabbage slaw. The whole thing was just sort of meh.
