Meh. I followed the recipe exactly. The end result was rather dry…it almost seemed there was too much rice or the rice absorbed all the liquid. Hubby thought it was rather bland. We ended up adding sour cream and more salsa to make it more palatable. On the plus side it was easy to make. I will not make this again.
So, this was supposed to be easy! I used all of the ingredients except I did not pre-cook the chicken. It turned out great! Easy and delicious!
My husband said it was a winner. My son preferred it a bit spicier, so for his version, he added two diced jalapeños. Serves with sour cream, chopped cilantro and chopped green onions.
