We're doing a fridge and freezer clear out, and found this recipe as a way to use wonton wrappers, among other things in the freezer, e.g. Impossible burger, tomatoes, mozzarella, frozen spinach. Omitted the bit of green pepper. The wrappers were ~3x3, so overlapping for a 9x13 for 3 layers, used 36 wrappers, not 18. Microwaved the 1# bag of spinach per the package directions, and squeezed out the water after it had cooled a bit. Added nutmeg to the spinach and cottage cheese (16 oz) mixture, not the tomato sauce. Freestyled the Italian seasoning and increased the chili flakes a bit. Finished under the broiler after the mozzarella had melted. This probably wasn't a lean recipe, but that wasn't our goal. It was a good use of our available ingredients.
How can you advertise a lasagna as "lean" and not provide neutritional data? Makes no sense.
