Name: Italian Cheese Cookies
Yield: Makes about 4 dozen
Ingredients: 2 cups sugar; 1 cup butter, softened; 1 teaspoon vanilla extract; 1 teaspoon salt; 1 15-oz. container ricotta cheese; 4 cups all-purpose flour; 1 teaspoon baking soda; Sweet Vanilla Icing:; ⅔ cup plus 1 T. sweetened condensed milk; ½ cup butter, softened; 1 teaspoon vanilla extract; 2 cups powdered sugar; Optional: red food coloring

Use an electric mixer on medium speed to blend sugar, butter, vanilla, salt and ricotta cheese. Gradually stir in flour; mix in baking soda. Drop by teaspoonfuls onto ungreased baking sheets. Bake at 350 degrees for 10 to 13 minutes. Cool on wire racks. To prepare Sweet Vanilla Icing: mix all icing ingredients with an electric mixer on low speed. Spread Sweet Vanilla Icing over cookies.
