Irish whiskey has a smooth, round flavor, as opposed to the smoky quality of Scotch whisky. If you don't have Irish whiskey, substitute bourbon.

Traditionally, a strong Irish whiskey is used, such as Tullamore Dew. I prefer Jameson. A spoonful or so of raw sugar is also added to the brew. I add a shot of Kahlua instead. It makes a great desert all by itself.
