I make German Potato Salad as my German mother taught me. Since I usually make enough for a large group, I use 5 lbs of Yukon Gold potatoes. I scrub them before cooking and I leave the peel on. I make my vinegar 1/2 white vinegar and 1/2 cider vinegar. I also add 1 lb bacon chopped before cooking and add the drippings to the salad too. The onions can be red or white. If you want vegan leave the bacon out. My husband got food poisoning at a college microbiology class picnic we went to. My lab partner and I were the only ones in the class that did not get sick. She didn't eat any potato salad and I only ate my German potato salad. Being true scientists our class did an epidemical study to find the culprit. It was Salmonella from one of our professors' mayo dressed potato salads. My hubby only eats my salad now.
This was a good recipe. I didnt use small potatos just basic red cut and boiled. The sprinkle of vinegar after they are done boing def adds alot of flavor, I just used white vinegar. I used the koulbasa as the protein in the meal so I didnt add it to the potatos, as well I didnt have caraway seeds so I didnt put in those either. I agree with the other reviewer that it could def use some sugar to cut the vinegar flavor, and bacon fat in the dressing, that would be much more traditonal and flavorful but also very fattening. I would make this again.
Delicious! Absolutely full of flavor, contrary to other reviews, especially from the caraway, zesty vinegar, and spicy kielbasa. I wouldn't change a thing.
This dish was dull and flavorless. Maybe some additional seasoning would liven it up.
Very good. However, I am German and I have watched the Master (my Grandmother) prep this potato salad: in order to be close to authentic it needs some sugar mixed into the dressing, bacon instead of the kilbasa, and some hard-boiled eggs (quartered) on top of the salad for garnish :) Cook the bacon first, discard all but a bit of the bacon grease, carmelize the onions in the same pan, add the broth, vinegar and vinegar. Mix with the cooked potatos. Salt and pepper to taste. Guten Appetit.
