Holiday Brunch Tonic
This fizzy beverage takes on a festive feel with the scent of rosemary-infused sugar syrup. Garnish with extra rosemary sprigs, if desired. Serve shortly after mixing everything together so the tonic will sparkle.

Every year I make this as a holiday punch for my Christmas brunch. I serve it in a beautiful drink dispenser filled with cranberries, pomegranate wheels, orange slices and rosemary. The ladies pour some punch into a champagne glass and then fill with Prosecco. It's a beautiful presentation and mix for champagne or sparkling wine. The ladies who don't imbibe enjoy it as a punch. This way I'm only making one drink that suits all my friends. Hints: Remember to make the simple syrup the night before in order to let the taste of the rosemary be fully infused. Also, freeze some large blocks of ice (e.g. in tupperware) that can chill the punch without diluting it too quickly.
This recipe is great! I added gin for a Spring Brunch drink. Others liked it with vodka, but it is good without alcohol.
