Outstanding. Added red pepper chili flakes and doubled the sauce (we like a lot of sauce, used about half of the extra sauce tonight, will add the rest tomorrow for leftovers). Scrumptious!
So I heeded some other reviewers' advice and this turned out really, really good. I lightly grilled two boneless, skinless chicken breasts and finished cooking them in the oven at a low temp. I also added a couple of good shakes of red pepper flakes. Rarely do I ever add any fat or calories to a CL recipe, but I only had 2% milk so I used 3/4 cup of it and 1/4 cup of half-and-half. Oh, this was so good and my family loved it.
I usually pan sear chicken and season each side with Montreal Chicken Seasoning. Cover and turn on low. This cooks the chicken without drying it out. There will be pan drippings that you can add to the pasta sauce.
Followed recipe to the letter. My husband really liked it but I felt it needed. ?.something. With this much prep work, I'm not sure I would make it again.
Made half the recipe for two of us, wish I had made more as we finished every last drop!
I used Kroger (King Soopers) Simple Truth rotisserie chicken and arugula instead of spinach, 2% milk, spaghetti with quinoa as that was what I had on hand. Adding sliced mushrooms & increasing the arugula (or spinach) by another cup or two would enhance it!
This will definitely go into the "rotation"!
This was quite tasty!! Did saute some mushrooms & onion to stir into sauce as well, and took other reviewers advice and gave it a few shakes of Red Pepper flakes too...
I made a few substitutions that made it even easier. I used a rotisserie chicken instead of grilling the chicken. I used evaporated milk instead of whole milk. We drink non fat milk so really didn't want to buy whole milk and I had evaporated milk on hand. I also added a little extra garlic. We all loved it!
Followed the recipe pretty much as written, adjusting the amounts to serve smaller portions. DH really liked this recipe, much to my surprise. He's the BBQ'er, so he did have to work on this one, ending up with a pasta dish. No complaints on my part. What was really nice about this dish: he cooked outside, I cooked inside, and we had veggies as well as a healthy protein dish. Winner, winner chicken dinner! Would not hesitate to make this again, perhaps to guests.
We found this a bit bland. It was a quick and easy meal to pull together, but we added some more seasoning and extra garlic to the sauce for flavor. Also, easy to sub in broccoli or other greens.
Very tasty! I used chicken tenders for easy cooking and I added wild mushrooms and sun dried tomatoes for flavor, but the recipe was great! Easy to follow.
This was fabulous. My family loved it. if I make it again i will add more spinach. I added broccoli to the leftovers for more vegetables.
This recipe was fantastic! What a healthy way to enjoy a creamy pasta sauce. I couldn't find bone-in chicken at the store, so modified the recipe slightly by baking boneless, skinless chicken breasts in the oven at 350F for about 8 minutes on each side. I slightly under-baked the chicken since I would be tossing the baked chicken in the pasta sauce later (which finished heating up and cooking the chicken). Also added some fresh basil leaves for a little extra taste!
This recipe was great. Full of flavor and doesn't taste healthy at all! I'm actually making this again for dinner tonight.
I made a single serving of this and had all the ingredients in my fridge/pantry so it was very easy. I just used a pre-cooked chicken breast. It was very good and filling for a quick weeknight dinner.

This will be my go to recipe for alfredo-like creamy pasta sauce. You can't mess this up! I used low fat milk and cut the oil in half and it was amazingly good. I loved the grilled chicken in it (I did what others recommended and grilled the chicken briefly and finished it in the oven). I forgot to get the spinach at the store so I made it without, but served it with grilled broccolini like was recommenced in the magazine. I'll be making this again and again and again!
Thought the sauce had a lot of potential. I used whole wheat pasta though (I really hate eating white carbs) and it did not work well - which is my fault since the recipe obviously calls for regular linguine. With the whole wheat it came out extremely goopy. Probably wouldn't make again, but if you are going to try it make sure not to substitute whole wheat!
Excellent and quick. Loved grilling the bone in chicken--so moist for the pasta. I did rough chop the spinach. May add red pepper and or peas next time. Will definitely make again.
Solid weeknight recipe - I thought it was very tasty and my husband loved it. I used cubed boneless skinless chicken breasts and just sauteed with the garlic and some olive oil & red pepper in a pan for ease of prep. The browned bits deglazed nicely with a little olive oil, flour and then the milk / broth mixture. I did add some cherry tomatoes onto the mix for a little brightness, and used vegetable (garden harvest) angel hair pasta for ingredient options. Also, used low-fat buttermilk in lieu of whole milk as that is what I had on hand; didn't notice any issues with the substitution. Good weeknight meal (though it definitely takes ~40 minutes) - very filling! Enjoy!
Really liked it, but my son didn't. Interesting take on grilling the chicken on the bone and then carving. Plan to have leftovers tomorrow.
This was superb! Used whole wheat pasta and 2% milk. Just cooked the chicken in a pan and then removed it. Added mushrooms and tomatoes to the pan when we cooked the garlic, which almost formed a paste. I kinda freaked out, so to loosen up the flour I added a splash of dry vermouth... Then I went on as planned. I might loosely chop the spinach next time, but otherwise I wouldn't change a thing!! My boyfriend actually asked me to "pin" this so we wouldn't forget what we did!!!
This was sooo good! I have three kids under the age of 6 and a meat and potatoes loving husband and even they ate every bite of it. I added a cup of mushrooms that I had in the freg, and substituted the Parmesan for Romano cheese and it came out so rich and delicious. I did end up having to add a little more milk so that it would get creamy, but Im sure thats only because I used whole wheat noodles and they tend to soak up mositure. OVERALL this is now part of our monthly menu :)
This was really good, however when I add of the calories I come up with over 100 more per serving, just the sauce alone is almost 200 by itself, am I missing something?

Outstanding! It is so simple to make and came together so quickly, which you would never suspect from the rich, creamy, garlicky result. I made exactly as written, except I subbed leftover roasted turkey breast (what I had on hand) and it was excellent. Next time I may also add some sautéed mushrooms and cherry tomatoes. A keeper!
Amazing! I used my grill pan on the stove to cook the chicken which created great grill flavor and texture. I did have to throw the chicken back on the grill pan once cut off the bone because it was still a bit raw in the middle - but was worth it for the flavor. The rest came together in a snap! I didn't have milk so I used 1/4 half and half mixed with water and it did the trick. I also used whole wheat pasta and it was delish. Can't wait to go home tonight and eat the leftovers.
This was really good. I sauteed the chicken just because I didn't feel like firing up the grill. The spinach gives this dish a really good texture but if I made this again, I'd add some red pepper to the sauce.

Made this tonight. FANTASTIC!!! Can't believe it only has 332 calories! We grilled hamburgers last night and I went ahead and grilled the chicken while we had fire. Saved tons of time when I got home from work. I will make it again and again and again!
I love this recipe! Very tasty as well as nutritious. I subbed in whole wheat pasta for regular and cubed my chicken. Also, it freezes well.
with two little ones under 3 i decided to give this one a try. it was GREAT! I ended up buying already cooked chicken breast strips to save time and it was a smart idea. QUICK meal and great for a weeknight.

This recipe makes a very creamy pasta dish that is actually healthy. Plus it is very easy to modify for what you have on hand. I replaced the spinach with broccoli and mushrooms. I used boneless chicken breast which I cut up, sauteed in the skillet and removed before making the sauce. This will definitely become a family staple!
Wow this was delicious! I did use boneless chicken breasts and whole wheat linguine but otherwise I followed directions exactly as written. It tasted like a light version of chicken Alfredo. It was super easy to make and my whole family enjoyed it, including my 3 year old!
I made this tonight and loved the ease of putting it together. It really came together quickly (faster than the 40 minutes CL showed). I think it was quicker because I used boneless, skinless chicken cutlets and instead of using the grill, I heated my grill pan under the broiler on high, then cooked the chicken under the broiler for about 5 minutes each side. I didn't have to worry with cutting it off the bone either. Other than that, I followed the recipe. I had all my ingredients ready before I started the sauce, so it went together so fast! My husband really loved it, too. It will become a recipe I will definitely make again!
