Can't wait to use with locally grown corn. A quick, easy side dish full of flavor that would be easy to double or triple for an office party or BBQ. I didn't have chives so I used sliced green onions instead. Herbs would be good to try too.
Who doesn't love corn? And! It has bacon! This dish was very simple to make and very quick (I used frozen corn). Don't be scared of the serving size. The flavors are there so you won't need more, but you will want more.
Just looking at the recipe, there was little doubt this was going to be delicious...and, unsurprisingly, it was delicious. Easy to make, quick to cook, but very small servings. It might veer a bit away from being "light" if you up the servings too much, but my advice is to double the amount, or at least do one and a half times the amount if you want four servings that don't look offensively stingy.
