Hot Chicken Deviled Eggs
Hot Chicken Deviled Eggs Recipe
These Southern-inspired deviled eggs say summer fun like nothing else. A picnic-perfect use for leftover fried chicken, these tasty bites are spicy, but not burn-your-mouth spicy. Feel free to increase or decrease the cayenne pepper depending on how much of a kick you like. A sweetness from the chopped pickles, tang from the vinegar and hot sauce, and salty-savory deliciousness from the fried chicken make for a perfectly balanced chicken + eggs-perience.

Pimiento Cheese Deviled Eggs
Pimiento Cheese Deviled Eggs Recipe
Two appetizer favorites team up for one incredible bite in these pimiento cheese-loaded deviled eggs. Combining two types of cheese creates a robust, smoky-sharp flavor for the eggs' filling that's richened even further by the addition of egg yolks. Especially for deviled eggs (when keeping the white intact counts most), steaming is the way to go. This cooking technique makes for near foolproof, easy peeling--the egg shells practically slip right off. Just make sure to give the hot eggs a few minutes to rest in ice water, this makes a huge difference when it comes time to peel the shells off.

Basic Deviled Eggs
The filling for Southern-style basic deviled eggs is nothing more than egg yolks, mayonnaise, mustard and sweet pickle relish. These deviled eggs are perfect for potlucks, tailgates, and summer suppers. Now, if you have trouble peeling hard boiled eggs, here's a trick: Once cool, crack the eggs and place in cold water for 10 minutes, then try peeling them. The peels almost always come off much easier. You can also place the filling into a piping bag for a pretty, swirled finished look.

Miso Deviled Eggs
This fun twist on deviled eggs is a nice change-of-pace dish for your next picnic or cookout. With just a hint of tang and spice, you could probably even trick your non-foodie friends into eating one. For this super simple dish, try to use older eggs—they will peel more easily. Look for togarashi in the same place you buy miso.

Turmeric-Pickled Deviled Eggs
Turmeric-Pickled Deviled Eggs Recipe
Deviled eggs get way more interesting when the eggs are pickled in a tangy brine that also dyes them a lovely color. The brine features turmeric, an orange-fleshed root that lends the eggs golden color and a peppery taste that’s matched by curry flavors in the filling. The longer the eggs marinate in the brine, the firmer they become and the more vibrant the color gets. If you’d like a tangier flavor, use some of the brine to loosen the filling instead of water. To update the look of these eggs, we cut them in half crosswise instead of lengthwise; you’ll need to slice a tiny sliver off each end so the egg halves won’t wobble on the platter.

Deviled Eggs with Crispy Chicken Skin
Deviled Eggs with Crispy Chicken Skin Recipe
This dish pays homage to the classic picnic staple, but it stands out among all the other variations out there. The soft-boiled eggs are enrobed in a creamy, cold, mayonnaise-based sauce that’s similar in style to the one that accompanies the Italian dish vitello tonnato, cold sliced veal cloaked in a rich tuna sauce. The crispy chicken skin garnish gives the dish a crunchy textural element that contrasts with the sauce and egg. You could make the eggs without this garnish, but I encourage you to try it at least once. There are a million tricks out there for how to make peeling eggs easier. The only one I can attest to is to use older eggs; farm eggs are often too fresh and their shells haven’t had time to cure, making peeling very difficult, so buy them well in advance of when you plan to make this dish. A little baking soda in the water helps, too.

"I can't have a party without deviled eggs," says Katie Lee, whose cooking often reflects her Southern roots (she was born in West Virginia). Here, she deconstructs the retro hors d'oeuvre, blending hard-boiled eggs with mustard and mayonnaise so it's more like an egg salad that she can spread on toasts. "Simplicity is key," she says.
