I'm glad I read the other reviews and added some onion and extra garlic. I also baked it for about 15 minutes with a layer of cheese on the top. I thought my daughter was going to eat the entire thing! Adding medium green chiles instead of mild next time.

This is a great weeknight meal. It was super quick and easy, tasty, and my kids liked it. Winner!
Made Recipe as written, it was good, but didn't knock my socks off; wouldn't serve to company.
Added 1/2 onion with garlic and only had diced toms and rotel with Ched cheese and it was awesome.
Plan to use this for my next baked spaghetti, and just shread the chicken after its browned.

I found this recipe only okay. I made it exactly as written, but I thought it needed more cheese. My batch also turned out quite watery. My husband liked it and ate two servings, and told me that he liked the combination of the chilis, chicken and tex mex cheese. My recommendation is to add more cheese when making this recipe.
Have been making all the chicken recipes from this issue, and they've been great. This one, just okay. It's not bad, but I think we really prefer a baked mac and cheese. I also used 2 whole fresh chiles. If I made this again, I'd probably follow another reviewer's advice and bake it for 10 minutes, maybe with a crumb topping.
Forgot - 1 more change - used almond milk instead of the low fat milk for an even healthier alternative
Very good - quick and easy with great flavor. Just the right amount of hotness to please everyone in my family. I made no changes other than adding additional chicken and more garlic to the chicken mix and adding salt to the water when I cooked the pasta.
This was a great dish! Very easy and good comfort food. I added some red pepper to the spice mix and would probably add a little more next time. I also added a little more salt than it called for. Great weeknight meal!
I really enjoyed this dish and it was quick and easy (bonus!); one of the better macaroni and cheese recipes from C.L. with lots of flavor. I made the following modifications: 1) Added more garlic; 2) Added 1 tbsp each of onion and garlic powder; 3) exchanged the chili powder for smoked paprika (for my 1 yr old son's taste buds); 4) added 4 slices (pre-cooked and chopped) bacon to the "boil" stage. Otherwise, made as directed and the end result was nice and gooey. Would absolutely make again; serve with a side of green veggies or a salad and you are good to go for 1 meal plus leftovers. Enjoy!
