There’s no need to buy the bagged stuff: If you’ve got five minutes, a food processor, and a head of cauliflower, you can make your own cauliflower rice. In addition to being a healthy rice substitute, making your own cauliflower rice is extremely easy. This stuff freezes great, so if you make too much or just want to make a bunch at once, seal in a reusable bag or container and stick it in the freezer.

  • Rinse cauliflower and pat dry. Remove core and leaves from cauliflower, and cut into large chunks.

  • Place half of cauliflower in a food processor, and pulse about 5 times, or until desired riced texture. Repeat with remaining cauliflower.

  • Pat dry with paper towels; use immediately, or store in a ziplock plastic bag or covered container lined with paper towels up to 5 days.
