I roast my cauliflower with olive oil and garlic instead of steaming. Tonight it needed a little something to make the consistency perfect so I added just a bit of low fat cream cheese and unsweetened almond milk. It didn't need the butter. My husband said it was better than mashed potatoes. That's huge coming from a meat and potatoes man! We had it with grilled ribeyes and a Chilean Cabernet. Better than a restaurant!
While this didn't taste bad, it was visually unappealing and the texture was odd. How anyone could mistake this for potatoes is beyond me. The puree was so strong, that the butter couldn't be tasted.
Deliciously low carb. Doesn't really need butter unless your guests don't like cauliflower.
Better than mashed potatoes and my husband kept saying these were the best potatoes he had ever had and I finally told him at the end. We used fresh chives from the garden and no-fat sour cream. We'll be serving this for thanksgiving to our dieting friends! One to keep for the recipe file. Used two small heads of cauliflower.
This was a really tasty and super healthy substitute for mashed potates and I loved every bite of them. Sadly my food processor wasn't working so I simply over cooked the cauliflower (I used frozen) and mashed it by hand. I can't wait to have these again!
This dish is delicious. My skeptical husband and kids were surprised how good it was. I will definitely make this again- it is a nice change from my regular cauliflower recipes.

Oh, so good - even after making them without the sour cream and chives (only because I didn't have the ingredients)! Looking forward to trying the recipe again as written, even though they are pretty darn yummy the way I had to make them.
I seriously can't believe how good this tasted. I don't even like cooked cauliflower and it was amazing. I think it tasted more like grits than mashed potatoes. It doesn't need the browned butter, but it's a really nice touch. I used the Tofutti sour cream product and about half the cheese.
This cauliflower has a rich, nutty flavor that is unusual and incredibly delicious! Since it was just for my husband and me I made only half the amount but otherwise made the recipe as written, although I didn't heat it in the microwave. I just served it at room temperature with halibut with a lemon/basil vinaigrette and asparagus. I will definitely make this again, including for a special occasion. I am especially delighted with this recipe because I am working very hard to include more vegetables in our meals and this was a delicious way to accomplish that objective.
Made as directed except I boiled a few cloves of garlic with the cauliflower and used fat free sour cream and light butter for less fat. Super easy and very delicious!
Wowzers! This was freaking amazing. I tasted it before I added the brown butter and almost skipped it because I was worried that it couldn't make it taste that much better to compensate for the fat. I'm so glad that I did though because it added an amazing layer of richness and depth. Really outstanding. My only complaint is that it really wasn't enough for six servings, especially since everyone wanted seconds.
Holy cow, was this good! I used reduced fat sour cream and butter/canola oil spread to help cut down on fat/calories and the flavor was still amazing. You would swear you were eating mashed potatoes!
My husband has told me we will never have mashed potatoes again. I only used half the amount of butter and did not brown it. Excellent recipe , quick and easy!

This is seriously better than mashed potatoes! I used a fresh head of cauliflower. My kids didn't even know they were eating cauliflower- that's how good this recipe is. It will now be a staple in our house.
Using the frozen cauliflower made this an extremely easy dish to make; easy enough for weeknights. It was wonderful without the brown butter also.
