Is there any food more perfect for fall than a sweet potato?  The roasted sweet potato is perfect alongside so many fall entrees (and of course whipped up sublimely into a Thanksgiving casserole), but this year I'm expanding my sweet potato embrace beyond the main course. Let's face it, these veggies are delicious in so much more than that.  

Here are 6 delicious new dishes to whip up this fall with that abundance of sweet potatoes.

Sweet Potato Pancakes

These can be made small, like blini, and become an elegant way to deliver a dollop of caviar and crème fraiche or a twirl of whipped feta. They can also provide a fun riff on chicken and waffles: Top with a fried chicken nugget for a small version, or a chicken tender for a more substantial mouthful.

Sweet Potato Biscuits

These can be made any size you like; we love them in a small one-bite 1 ½ inch size. Split and top with country ham or other cured meat, a schmear of honeyed cream cheese, a slice of sharp cheddar, or a baked goat cheese with hot pepper jelly. They're a wonderful vehicle for all sorts of toppings—let your imagination go wild.

These crispy pancakes made of shredded potato are amazing on their own, topped with sour cream and applesauce. But if you want to zhuzh them up, think about topping with mango chutney and a candied bacon crisp, or a spicy salsa and avocado.
